Oca tubers from Dutch soil

We are very proud of the cooperation with our enthusiastic growers. That is reflected in fantastic products, such as these Dutch oca tubers. Harvested for the first time in the Netherlands, a real innovation!

The oca tubers, or oxalis tubers as they are also called, originated in Peru. However, they have now also been grown in the Netherlands for the very first time. The oca is planted in spring and harvested in winter. The oca cannot withstand frost however. Thus, as soon as night frost is imminent, the oca must be well covered. As soon as the temperature rises again however, it must immediately be given the space and light to grow. A very intensive cultivation for this special product.

Oca is related to the wood sorrel, which is also clearly visible in the leaves that emerge above the ground. The oca comes in four different colors, red, pink, orange and white. All colors have a slight difference in taste, but the typical fresh and crunchy oca taste is always present. In Peru, the oca is mainly used in soups or in a traditional Peruvian barbecue, roasted in a pit with coals. However, also raw, the oca tubers have a surprising taste. The addition of sushi vinegar, for example, increases the tension and complexity in the taste.

 

Red oca tubers

Taste: A crispy and juicy tuber. Family of the wood sorrel, so raw nice and fresh.

Preparation: Both raw and cooked interesting. Cooking makes the tuber softer and milder.

Combine with: The tension and complexity is increased by adding, for example, sushi vinegar.

Orange oca tubers

Taste: A wonderfully fresh and crunchy tuber. The taste of the orange oca is more fruity than the red variety.

Preparation: Try raw thin slices or puffing.

Combine with: Delicious with ceviche or processed in a poké bowl.

Pink oca tubers

Taste: Earthy taste and wonderfully juicy.

Preparation: Try to prepare them in a traditional Peruvian barbecue, roasted in a pit with coals.

Combine with: In Peru often used hot in soups. When warmed, the oca becomes a lot milder in taste.

White oca tubers

Taste: Juicy, slightly fresh and spicy. The surface of the tubers is irregularly shaped.

Preparation: Raw, thinly sliced ​​or stewed.

Combine with: Here too, the tension and complexity is increased by adding sushi vinegar, for example.

The quality of their stuff is also three levels highter than before. But what i'm most happy about is the service of Rungis. I have never experiences this in twenty years in the hospitality industry.
