Deze radijssoort is de kleine versie van de rettich wortel. De smaak van ijspegels is iets zachter dan die van radijs. Lekker om rauw te eten door salades, maar ook erg lekker geblancheerd of geroerbakt. Niet alleen de ijspegel is eetbaar maar ook het blad.
