Tasteful vegetables from the pond!

Micro greens, lettuce and herbs with an intense and extraordinary flavor.

As one of the first growers Han and Saskia Lammers from ´PUURgroenten´ started an massive experiment. These, originally potato growers, now grow on a small base micro vegetables, lettuce and herbs using a new cultivation technique. They literally experiment in their own backyard with different vegetables in a pond.

Discover by experimenting

The fresh vegetable lumps ´float in the pond´ with only their roots in the rich nutrient water. Out of the 60 different kinds of leafy vegetables, micro vegetables and herbs, each with a different taste and smell, they search for the best basic products and the finest gems. Thinking about the Chef´s who like to work with tasteful and when possible new top products.

Experimenting is the core of this cultivation method, This way they continue to discover real gems and new flavors. Also, this way of growing is responsible for people, the environment and our planet. Energy for the pond in generated by using solar panels and no chemical pesticides are used. For the pond they use rainwater, which is collected in a large silo.

Wide palate

It´s such a shame you can´t smell the fantastic flavor through this column. When entering the green house, called ´the garden´, you will meet a wonderful aromatic scent. The green house is sealed of for insects, but open for wind and temperature, this way the product remains firm and crunchy. These pure vegetables, which are grown with love, need between the 30 and 60 days to grow from a seed to an edible product.

Behind every kind there´s a story full of passion, for example the Red Featherleaf, Red Orach, mini fennel, micro turnip, Chinese chives and Amaranth Mitsuna. All fresh vegetables have a hugh flavor palate with notes of bitter, sweet, sour, mustard, anise, nuts, licorice, hard, soft or mild. They come straight unsprayed out of the pond, into your hand and on the plate. The entire assortment of PUURgroenten is available at Rungis. An absolut remarkable sensation!

In the first place because of the enormously wide range of products. And as an extra, i’m a big Japan fanatic and Rungis imports a lot from Japan; that’s also an important reason

Fortunately, there’s a constant supply at Rungis, because we sometimes need three hundred kohlrabi. Not just for De Librije, but also for Bar Senang: fruit and vegetables are wel represented on the menu there too.
