New: Moai Caviar, fresh sea grapes from The Netherlands

Moai Caviar is also known as ‘Umibudo’, the Japanese word for sea grapes or green caviar. These green sea grapes have a remarkable appearance that is reminiscent of berries or grapes. Eating green sea grapes is an unique experience due to their ‘poppy’ structure. The little cells easily burst on the tongue, releasing a pleasant salty taste. A visually appealing ingredient with a gel-like and juicy mouthfeel.

Exclusive launch

Fresh green sea grapes are a real delicacy and are grown in The Netherlands by Koppert Cress. During the months of the launch, Rungis is the exclusive supplier of the Moai Caviar. The sea grapes are 100% fresh, this provides an extraordinary taste and mouthfeel. Until now, sea grapes were only available preserved in brine. So these fresh ones are truly special.

Truly fresh, truly different

The Moai Caviar or sea grape is an algae that’s usually offered in brine. This brined product is harvested from the reefs in the subtropical waters of the Pacific. Before using the preserved variant, place it in tap water to desalinate, the unique ‘poppy’ structure partly finds its way back, although this alternative for fresh will never regain the original, and incredibly pleasant bite.

Blue Zones

The origin of the word ‘Moai’ comes from a group elders  in Okinawa Japan, one of the original ‘Blue Zones’. Blue Zones are areas in the world where people live measurably longer. The Moai Caviar’s origin can be traced back to Japan, The Philippines, Thailand and Vietnam.

Valuable nutrients

In their natural environment, the plants grow very quickly and are an important source of healthy food for the local population. The sea grapes are traditionally used as salty vegetables, contain valuable nutrient and all parts of the plant are edible.

Store at room temperature

Moai Caviar is available all year round, and is grown and transported in salt water. Moai Caviar can easily be stored for up to seven days at a room temperature of 17-25 °C, avoid direct sunlight. Moai Caviar meets the hygiene standards in the kitchen, the product is ready to use and available now!

The quality of their stuff is also three levels highter than before. But what i'm most happy about is the service of Rungis. I have never experiences this in twenty years in the hospitality industry.
