Fruit and vegetable vinegar and oil from Romina

Romina is the company of an eccentric German gourmet with a nose for quality. Crazy Mike is on a quest to source the very best ingredients, such as bergamot from Calabria, porcini mushrooms from Piedmont, cardamom from India, to bring his masterful creations to life. By boiling down, distilling and fermenting we ‘capture’ the flavours and create powerful vegetable and fruit oils and vinegars.

The core of his creations always starts with a neutral olive oil, usually the Hojiblanca variety, or a fruity fresh vinegar made from the Trebbiano Toscano grape, which is rich in fruit sugars. In addition, Romina offers a white wine vinegar based on Trebbiano and a wonderfully syrupy Aceto Balsamico.

Not too sour, not too sweet

Romina also has a beautiful fermented tomato paste in its range, the tomato strattu. The tomatoes are carefully stripped of their skins and seeds, after which they are dried on wooden planks in the warm Sardinian sun. During this process, the tomatoes are dried to approximately 1/25 of their original weight and undergo a fascinating fermentation process. The result is a tomato puree 2.0 with a delicious umami undertone.

The vinegars are made using the Trebbiano Toscano grape, which is naturally rich in sugars. This creates a fruity taste with a mild aftertaste. Besides the apple cider vinegar, they contain no additional sugar. The viscosity is expressed as a number: the higher this number, the thicker and sweeter the vinegar is.
